Miranda Lambert’s Mom’s Engagement Meatloaf Is So Good That You Might Get A Proposal
First comes the chicken
A few years ago there was a recipe that went viral for it’s propensity to make a man get on his knee and propose marriage almost before the last bite was finished. It was called “Engagement Chicken” and people were swearing by it’s magical powers.
Even the Barefoot Contessa was making it and claiming it was so good that she wanted to “marry myself” just for making it so delicious!
Here’s the recipe for Engagement Chicken
INGREDIENTS
- 1(4 -5 lb) roasting chickens
- kosher salt & freshly ground black pepper
- 2lemons
- 1whole head garlic, separated into cloves, peeled
- olive oil
- 2Spanish onions, peeled and quartered
- 1⁄2cup dry white wine
- 1⁄2cup chicken stock, preferably homemade
- 1tablespoon all-purpose flour
Cooking it
- Place the reserved lemons and the sliced onions in a large bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Pour the mixture around the chicken in the pan.
- Roast the chicken for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and a thigh.
- Remove the chicken to a platter, cover with aluminum foil, and allow to rest for 10 minutes while you prepare the sauce, leaving the lemons and onions in the pan.
- Place the pan on top of the stove and turn the heat to medium-high.
- Add the wine and stir with a wooden spoon to scrape up the brown bits. Add the stock and sprinkle on the flour, stirring constantly for a minute, until the sauce thickens.
- Add any juices that collect under the chicken. Carve the chicken onto a platter and serve with the lemons, onions, and warm sauce.

Ingredients
- 2 lb lean ground beef
- 1 lb ground pork sausage
- 18 saltine crackers, crushed
- ½ green bell pepper, diced
- ½ onion, finely chopped
- 2 large eggs, lightly beaten
- 1 Tbsp Worcestershire sauce
- 1 tsp yellow mustard
- ½ cup firmly packed brown sugar, divided
- 1/2 cup ketchup
Preparation
- Preheat oven to 350°F. Combine first 8 ingredients and ¼ cup brown sugar in a medium bowl just until blended.
- Place mixture in a lightly greased 11- x 7-inch baking dish, and shape mixture into a 10- x 5-inch loaf. Bake at 350° for 1 hour.
- Remove from oven and drain. Stir together ketchup and remaining ¼ cup brown sugar; pour over meatloaf. Bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 160°F.
- Remove from oven; let stand 20 minutes. Remove from baking dish before slicing.
