One Snow Day Sweet To Survive The New England Nor’easter
Snow Days Sweets in New England are a requirement when you’re faced with a Nor’easter. (Or lack of one. The jet stream is really messing with our meteorologists.)
Snow or not, the kids are home, or you’re working from home. Someone is home! And they need to eat. They need to eating something sweet and homemade and preferably right out of the oven so your house smells like a bakery.
That’s where Snow Days Sweets in New England come in!
I have a huge collection of recipes I print from websites I like. Some I make. Most I don’t. But I always have a go-to for those days when you want something sweet and need to make it fast.
My daughter Lucy is a huge fan of brownies. To be honest, I usually make them from the box – Duncan Hines, Betty Crocker. They never disappoint. But a snow day? You’ve got time, baby. So why not try something simple – but from scratch. Who doesn’t like “It’s from scratch” bragging rights? No one!
So, when I’m stuck in my house, this is my go-to quick recipe. It’s pretty simple, it involves a skillet and Lucy is one happy kid.
I got the recipe from the New York Times cooking section. The best part is it’s all mixed and baked in the same skillet. Fewer dishes. Genius!
Snow Day Skillet Brownies
(This makes about 8 servings.)
- ¾cup unsalted butter
- 6 ounces bittersweet chocolate, coarsely chopped (about 1 cup) *don’t use chocolate chips. They don’t melt right, in my opinion
- ½ teaspoon salt
- 1½cupsgranulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- ¾cup all-purpose flour
- Ice cream, for serving (optional)
Turn off the heat.
Working fairly quickly, whisk in sugar until smooth, then whisk in eggs and vanilla. Finally, whisk in flour until no streaks remain.
Then bake until the top is set, the center is soft and the edges are firm and start to pull away from the pan, 20 to 27 minutes. (A toothpick inserted into the center will come out gooey.) Transfer to a wire rack to cool. Serve straight from the pan. We’re partying! It’s a snow day!
Add ice cream on top and go nuts.
All the sugar will help with shoveling!
