I do not cook very much. It’s not that I don’t like to cook. I do. It’s just time consuming. By the end of the day I’m usually tired and cooking takes TIME! I am very impatient. As a result, I often overcook meats and chicken. It’s hard for me to take it slowly. Last night, I found an easy meal that is quick, pretty healthy and really delicious!
My Pan Fried Pork Chops!
So, I’ve committed to cooking more in the new year. It’s healthier than eating out and it’s cheaper, too!
I bought some bone in pork chops, rubbed them with peppercorns and a bacon chipotle rub and then cooked them in a frying pan in olive oil on medium/high heat. I cooked them for four minutes on each side and then, after pre-heating the oven to 400 degrees, put them in the oven for 10 minutes to finish them. You have to make sure to cook pork to a minimum of 145 degrees and one of the porch chops I was cooking was pretty thick. The four minutes on each side didn’t cook it all the way through. Make sure and use a meat thermometer to check the temperature and you can also cut into them for a visual check. If you choose thinner pork chops you don’t have to finish them in the oven.
They were spectacular. I ate them proudly, by myself, and texted my family the pictures as they sat in the other room. No one wants to be near me when I cook! LOL!! My wife tried one and loved it, which is a good thing!
CAUTION: I actually used a little too much olive oil and there was a splatter issue. When I picked up the pan to move the oil around, the flame from the stove ignited the olive oil that had splattered out to the side. YIKES! I put the pan back down and the flames died down. Lesson learned!
