After the rear view mirror came off in my hand leaving the grocery store Sunday, I was feeling a bit stressed. So...I cooked.
Cooking is a wonderful, creative stress reliever for me. And I was gonna cook anyway cos I generally make meals in advance so I can just grab and go during the week. I'm not a "fancy" cook; I have friends who are much better cooks than I am but I do love it.
Sometimes I cook too much and the neighbors benefit! I wish my kids lived closer.
Here's a few things I made Sunday morning.

So, here's what I did: I made sauce a couple weeks ago and I like the flavor of sweet and hot Italian sausage in the sauce but wanted the sauce "meatless" when I put it over pasta. SO I took the whole sausages out of the sauce when it was done and froze them. A couple weeks later, I let them thaw a bit, cut them up and put them in with the vegs and all this week I'm having sausage, peppers & onions for lunch!

Bacon, onion, spinach, cheddar quiche! I didn't make the crust, bought it in the frozen foods aisle. It's pretty good and it's what's for breakfast & dinner!

Aren't these GORGEOUS!!! Baked acorn squash! DELICIOUS!!! I paired it with some steamed broccoli and a piece of that quiche for dinner Sunday & Monday.
